Flax Shortbread Cookie

Ingredients
- 1 1/2 cups Manitoba Milling Co. Flaxseed
 - 1/2 cup granulated or coconut sugar
 - 1/4 cup coconut oil, warm and melted
 - 5-6 tsp water
 - 1 tsp cinnamon
 - 1/2 tsp salt optional
 - sprinkle of powdered sugar optional
 
Instructions
- Preheat oven to 325 degrees. Line baking sheet with parchment paper.
 - In a medium bowl, whisk Manitoba Milling Co. Flaxseed, coconut sugar, and salt.
 - Add warm coconut oil and water and stir until the mixture becomes dough-like. Let the dough sit for five minutes to absorb the liquid.
 - Roll the dough into even balls on the parchment paper. Can use a cookie scooper for this. Dip the bottom of a glass into sugar and flatten the dough in an even circle.
 - Remove from the oven and sprinkle cookies with powdered sugar if desired.
