5 Last Minute Snacks for Your Summer Road Trips

Tis the season of summer fun and weekend road trips. Don’t leave home without some healthy snacks to keep from munching on less healthy convenience store choices.

Below are a few simple snacks you can easily prep at home and bring for the car (or plane) ride.

 

1. Salad in a Jar

Layer a large mason jar with dressing on the bottom, then veggies, whole grains, beans, chicken, and lettuce on top. When you’re ready to eat, just shake the jar to mix! Don’t forget to add a scoop of flaxseed to the dressing for added nutrients.

2. Superfood Peanut Butter in a Jar

Mix some flaxseed with your favorite peanut butter. Add a big scoop to a mason jar and top with apple slices, celery sticks, pretzels, or your other favorite snacks for dipping. You could also add flaxseed to hummus or guacamole with other snacks for dipping.

3. Yogurt Parfaits

If you plan to bring a cooler or insulated lunch box, this will work well. Lay a jar with yogurt, granola, fruit, and flaxseed for a simple, balanced, and filling snack on the go.

4. Energy Bites

Just combine a few pantry essentials and press into no bake bars or round into balls. We like this recipe – using peanut butter, honey, oats, flaxseed, and chocolate chips.

 

5. Popcorn Trail Mix

Spice up your popcorn with some nutritious mix-ins. Add popcorn to a large bowl and sprinkle in enough flaxseed to lightly coat the popcorn. Add in any other mix-ins you like. We like to make it sweet with dark chocolate chips or cinnamon or savory with nutritional yeast or sunflower seeds and almonds. Portion the popcorn mix into individual zip lock snack bags and bring one for everyone.
