Peanut Butter Banana Nice Cream

With warmer days on the horizon, we are already dreaming about refreshing snacks and treats. Although we admit we still enjoy ice cream and slushies all through the winter, there’s something special about snacking on a cool treat under the warm spring and summer sun. 

While we do love a decadent bowl of rich ice cream or a nice slice of chocolate cake, sometimes we crave something a little lighter that paradoxically leaves us feeling fuller for longer. Does that sound like something you look for too? If so, this recipe is for you!

What is Nice Cream?

You already know ice cream, but enter…nice cream! We won’t try and trick you into thinking this is a perfect replacement for ice cream — it’s not! This is something else entirely, but still extremely delicious in its own right. Ice cream will still have a special place in our hearts, but you may also find yourself gravitating towards this filling, nutrient dense snack! 

This sweet treat gets its creaminess from bananas and Manitoba Milling Co. Flax Beverage and packs a punch in the flavor department. This recipe combines frozen bananas with complimenting flavors to make a cool, velvety treat that you could even eat for breakfast!

We opted for a chocolate peanut butter version to embrace the fresh banana flavor. However, this recipe is just a suggestion of where to start! You can intensify your favorite flavor by adding more of a specific ingredient like chocolate or peanut butter. 

Consider trying other flavors with this ratio: 2 bananas, 1 Tablespoon Manitoba Milling Co. Smooth Whole-Milled Flaxseed, and 3-4 Tablespoons Manitoba Milling Co. Flax Beverage. For example, mix in fresh or frozen strawberries for a strawberry banana combo, or skip the nut butter all together for a classic chocolate banana flavor!

This ratio will yield a light, creamy texture, but if you’d like a more rich, thick snack, use less flax beverage. The texture will be smooth straight out of the blender, so you can enjoy as is or spoon the mixture into a freezer-safe container and freeze for a few hours.

Peanut Butter Banana Nice Cream

  • high speed blender

Ingredients

  • 2 bananas frozen
  • 1 Tablespoon Manitoba Milling Co. Whole-Milled Flaxseed
  • 3-4 Tablespoons Manitoba Milling Co. Unsweetened Flax Milk
  • 1 Tablespoon cocoa powder
  • 2 Tablespoons nut butter
  • 2 Tablespoons chocolate chips or chunks
  • Optional: Chopped peanuts chocolate sauce, extra peanut butter, for topping

Instructions

  • Freeze bananas overnight.
  • Place frozen bananas, milled flaxseed, flax beverage, cocoa powder, and nut butter in a high speed blender. Blend or pulse on medium speed until smooth and thick. Add chocolate and pulse until chocolate reaches desired texture.
  • Spoon banana mixture into a freezer-safe container, preferably with a lid. Drizzle banana mixture with chopped peanuts, chocolate sauce, or peanut butter, if desired. Use a butter knife to swirl drizzles into banana mixture.
  • Serve immediately for a soft texture, or cover and freeze for at least 2 hours for more ice cream-like texture.
