Antioxidant Rich (No Added Sugar) Orange Creamsicle Popsicles

I always thought people added citrus peel to recipes because they smell and taste fantastic. Little did I know how beneficial limonoids (compounds found in citrus peel) are to your health! Limonoids have antioxidant, anti inflammatory, and antimicrobial properties (learn more here). Who knew?!

 

Working with people with infertility, and who are pregnant or lactating, I am always pushing antioxidants. Naturally, I had to find a way to sneak limonoids into a recipe. Since I have a ton of vegan clients, I decided to create a vegan-friendly and antioxidant-rich treat. Manitoba Milling’s new Flax Milk is the perfect addition to these popsicles. Combining the antioxidants found in citrus peel and juice (vitamin C is an antioxidant too!) with the antioxidants found in the flax milk, these popsicles are an antioxidant powerhouse! The dark chocolate drizzle at the end give them an extra antioxidant boost.

 

For this recipe, I used Zoku popsicle molds which freeze the pops in just 10 minutes. If you use traditional popsicle molds, let them set in the freezer for at least 4 hours or overnight.

 

 

Yield: 4 popsicles

Ingredients:

1/2 cup Manitoba Milling Co. Flax Milk
3/4 cup 100% orange juice (or fresh squeezed)
1 Tbsp orange zest
1 Tbsp dark chocolate chips (dairy free if needed)

Directions:

  1. Combine the milk, orange juice, and zest in a blender and blend until smooth.
  2. Pour the mixture into your popsicle molds.
  3. Before serving, melt the chocolate chips in the microwave (microwave for about 2 minutes, stirring every 30 seconds or so). When the popsicles are ready, drizzle chocolate on top and serve.
