Preheat oven to 325 degrees. Line baking sheet with parchment paper.
In a medium bowl, whisk Manitoba Milling Co. Flaxseed, coconut sugar, and salt.
Add warm coconut oil and water and stir until the mixture becomes dough-like. Let the dough sit for five minutes to absorb the liquid.
Roll the dough into even balls on the parchment paper. Can use a cookie scooper for this. Dip the bottom of a glass into sugar and flatten the dough in an even circle.
Remove from the oven and sprinkle cookies with powdered sugar if desired.
