Your Memorial Day Cookout Menu (+Shopping List too!)

The unofficial kick-off to summer is just around the corner and while most of us will not be attending large gatherings this year, there’s no reason you can’t still cook a fun holiday meal.

We put together a simple menu for a multi-course meal to help you celebrate. As a bonus, many of these include milled flaxseed and lean on pantry staples. Check out the grocery list at the end to minimize your time spent at the grocery store, or order online!

Appetizers

Crudite doesn’t have to be boring. Arrange vegetables, hummus & Flaxseed Crackers with Rosemary and Sea Salt on a pretty plate and garnish with additional sprigs of rosemary. The homemade crackers really elevate this and they are so simple to make at home with just a few simple ingredients.

Entree

Our Black Bean Burgers with Flaxseed are a flavorful plant-based entreé served with lettuce, tomato, and avocado on whole-grain buns. It’s a high-fiber dish that even meat-eaters will love. Flax is a great (gluten-free) alternative to breadcrumbs. Use it as a binder in any of your favorite meat or plant-based burger recipes!

Side Dishes

Asparagus with Crunchy Flax Topping can be made on the grill if you don’t want to turn the oven on, just be sure to wait until you plate it to add the topping. 

You can never have enough side dishes at a cookout, so add in a salad too. A homemade dressing like this Creamy Lemon & Herb Flaxseed Salad Dressing will add great flavor and is made of staples you probably have on hand. 

Round out the sides of your meal with a seasonal fruit plate picking up whatever looks particularly vibrant at the store.

Drink

Step up your hydration with something that’s refreshing without being loaded with sugar. We love sparkling water with fresh lime juice and mint, a sort-of mojito mocktail! You can also add a splash of juice or lemonade if you have it on hand. 

Dessert

For the grand finale, it wouldn’t be a celebration without something sweet. This Fruit Pie with Lemon Yogurt Filling and Graham Cracker Flax Crust is delicious, festive, and features a hearty flax crust.
