Equipment

  • Oven
  • Stovetop or Microwave

Ingredients

Regular Crust

  • 1.5 cups warm water ~90 degrees Fahrenheit
  • 1 Tablespoon sugar granulated
  • 2 teaspoons dry yeast about 1 packet
  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • ½ cup Manitoba Milling Co. Smooth Whole Milled Flaxseed
  • 3-3½ cups all-purpose flour

Whole Wheat Crust

  • 1.5 cups warm water ~90 degrees Fahrenheit
  • 1 Tablespoon sugar graulated
  • 2 teaspoons dry yeast about 1 packet
  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • ¼ cup Manitoba Milling Co. Smooth Whole Milled Flaxseed
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour

Instructions

  • Decide whether you are making the classic or whole wheat version; collect ingredients.
  • Warm water in the microwave or over the stovetop to about 90 degrees Fahrenheit.
  • In a large bowl, add the warm water and sugar. Stir until sugar is dissolved. Sprinkle yeast over water and gently stir together. Let sit for 10-20 minutes or until the yeast “blooms” and forms a puffy layer on the surface (if you do not see bubbles, your water may have been too hot or your yeast is no longer active).
  • Add salt and olive oil, and flaxseed then stir together. Add flour(s), one cup at a time, until the dough comes together into a ball.
  • Knead dough until smooth (about 8-10 minutes).
  • Cover the bowl with a towel or plastic wrap and set in a warm place to proof for 1-2 hours, or until doubled in size.
  • Prepare a baking sheet with olive oil and parchment paper (if desired). Preheat the oven to 475 degrees Fahrenheit.
  • Once dough has proofed, stretch the dough using the back of your hands/knuckles to your desired shape and size. Transfer to baking sheet.
  • Top the dough with sauce and toppings of your choice then bake on the center rack for 10-15 minutes or until the crust starts to brown and the cheese is melted and bubbly. Slice and serve warm!

Notes

  • To knead, press the heel of your hand into the dough ball and firmly push away. Fold the dough over on itself and repeat. Turn the dough 90 degrees and repeat until smooth.
  • If the dough is too sticky to knead, you can add flour, one tablespoon at a time. Alternatively, if the dough is too dry, you can wet your hands and slowly add water into the dough as you knead.
  • If you are cooking in a cold kitchen, you can create a make-shift proofer by letting the dough rest in an [off] microwave or oven with a cup or bowl of hot water.
Feel free to use this recipe with a pizza stone, grill plate, or to make mini pizzas in a toaster oven.
