Peanut Butter Banana Nice Cream

Ingredients

  • 2 bananas frozen
  • 1 Tablespoon Manitoba Milling Co. Whole-Milled Flaxseed
  • 3-4 Tablespoons Manitoba Milling Co. Unsweetened Flax Milk
  • 1 Tablespoon cocoa powder
  • 2 Tablespoons nut butter
  • 2 Tablespoons chocolate chips or chunks
  • Optional: Chopped peanuts chocolate sauce, extra peanut butter, for topping

Instructions

  • Freeze bananas overnight.
  • Place frozen bananas, milled flaxseed, flax beverage, cocoa powder, and nut butter in a high speed blender. Blend or pulse on medium speed until smooth and thick. Add chocolate and pulse until chocolate reaches desired texture.
  • Spoon banana mixture into a freezer-safe container, preferably with a lid. Drizzle banana mixture with chopped peanuts, chocolate sauce, or peanut butter, if desired. Use a butter knife to swirl drizzles into banana mixture.
  • Serve immediately for a soft texture, or cover and freeze for at least 2 hours for more ice cream-like texture.

Notes

  • This recipe is just a suggestion of where to start! You can intensify your favorite flavor by adding more of a specific ingredient like chocolate or peanut butter. 
  • This ratio will yield a light, creamy texture, but if you’d like a more rich, thick snack, use less flax beverage.
  • The texture will be smooth straight out of the blender, so you can enjoy as is or spoon the mixture into a freezer-safe container and freeze for a few hours.
  • Consider trying other flavors with this ratio of 2 bananas, 1 Tablespoon Manitoba Milling Co. Whole-Milled Flaxseed, and 3-4 Tablespoons Manitoba Milling Co. Flax Beverage. For example, mix in fresh or frozen strawberries for a strawberry banana combo, or skip the nut butter all together for a classic chocolate banana flavor!
